Calcium Silicate

Calcium silicate is a white, highly absorbent anti-caking mineral used to keep table salt, baking powders, and hygroscopic dry blends from setting hard in humid storage. It takes up water and oil traces at the particle surface so crystals stay separate and pourable. Food-grade material is a light, chalky powder with no flavour at approved use levels. It is insoluble and remains dispersed through the mix rather than dissolving into a brine. Over-addition can dull mouthfeel or leave a dusty film—formulators stay well below sensory thresholds. Not interchangeable gram-for-gram with silicon dioxide; absorbency and bulk density differ by grade.

History

Synthetic calcium silicates developed as industrial absorbents and insulation fillers.

US

Food use of calcium silicate expanded for free-flowing table salt.

Baking powder and dry-mix makers adopted calcium silicate for humidity resistance.

Global additive lists harmonised calcium silicate as a permitted anti-caking agent.
