Sorbate Solution
Sorbate solution is a pre-dissolved aqueous potassium sorbate concentrate or ready-use dip for surface treatment of cheese, dried fruit, and intermediate-moisture goods. Liquid dosing avoids undissolved crystals and suits spray or soak steps on packing lines. Strength must be labelled and verified—weak solutions under-preserve; strong ones can taste soapy. Keep closed to limit contamination and evaporation. Use within process windows for pH and product water activity.

Minerals
A 20% w/w potassium sorbate solution used to meter preservative into wine and fillings. Water is ~80 g; the dissolved salt adds potassium (~5200 mg) and no sugars.
History
Ready sorbate dips standardised surface mould control on cheese lines.
Metered liquid sorbate simplified continuous dried-fruit and filling dosing.
Stabilised bulk solutions served plants avoiding powder handling entirely.
