Ash

Ash is what remains when the organic portion of a food is burned away: the salts of sodium, potassium, calcium, phosphate, and silica, weighed as minerals rather than as milligrams of each element. It supplies no calories. Baking powder, curing salts, and a silica carrier hold most of their weight here; a steak holds only a gram or two.
