Glycerol

Glycerol (glycerin) is the sweet triol backbone of food fats, used on its own as a humectant in icing, dried fruit, and low-sugar bars. It is metabolised at about 4.3 kcal/g, not at the 2.4 kcal/g factor used for bulk polyols such as sorbitol.
