Sourdough culture yeast names the mixed, often wild or house-adapted yeasts living in a flour-water starter alongside lactic bacteria. Species may include Kazachstania, Saccharomyces, and others depending on flour, temperature, and feeding. The “variety” is the living community, not a single pure sachet strain. Maintain with regular feedings; bake when the culture is active and peaked. Good starters smell tangy and bready and double predictably; neglected starters smell rotten or grow mould and should be discarded. This path needs no commercial yeast packet, but it is slower and more variable than Instant Dry. Keep a backup if the culture is precious.
