Saccharomyces cerevisiae is the principal yeast species of baking and ale brewing—the organism behind fresh cake yeast, active dry, and instant dry bakery products. In dough it ferments maltose and other sugars, releasing carbon dioxide that stretches gluten and a mild fruity-bready aroma. Different commercial strains of this species are selected for lean breads, sweet doughs, or high-sugar tolerance, but they remain one species with shared kitchen behaviour. A good baker’s culture of S. cerevisiae is lively, clean-smelling, and doubles dough on the schedule the packet or block promises. Stale, heat-killed, or contaminated cultures leave dense loaves and off flavours. Keep dry forms sealed and cool; keep fresh blocks cold. This is the default species when a recipe simply says yeast.
