Osmotolerant baking strains are S. cerevisiae selected to work in high-sugar doughs—brioche, sweet rolls, doughnuts—where ordinary yeast slows or stalls. They tolerate osmotic stress from sugar and fat better, so enriched recipes rise on time. Use when a sweet dough recipe specifies osmotolerant or “sweet dough” yeast, or when standard instant yeast underperforms in rich formulas. Good cultures still smell clean and give even crumb; overdosing yeast can make flavour harsh. Store like other dry yeast. Pair with lukewarm liquids, not hot milk that kills cells.
