Kazachstania humilis (often discussed with related sourdough yeasts) is a common yeast of traditional wheat sourdough ecosystems, coexisting with lactic bacteria rather than replacing baker’s yeast packets. It contributes leavening and aroma in long, acidic ferments where commercial S. cerevisiae is not the star. You meet it in healthy sourdough starters, not usually as a labelled retail jar. Maintaining a starter with regular feeding preserves these wild or house cultures. Good starters smell tangy and bready; pink, rotten, or neglected starters should be rebuilt. Do not expect instant-dry speed from a pure K. humilis culture alone.
