Distiller's Strain

Distiller’s strains are yeasts selected for high alcohol, rapid attenuation, and flavour suited to whisky, rum, or neutral spirit washes—not for tender sandwich crumb. They are industrial fermentation cultures sold to distillers and hobby mash makers. Good distiller’s yeast finishes strong and relatively clean for the style; stressed ferments throw off-notes into the spirit. Keep separate from bakery yeast storage to avoid mix-ups. Bread bakers should stick to baker’s Instant Dry or Fresh.
