Baker’s strain yeast means commercial S. cerevisiae selected for dough: fast gas in flour systems, tolerance of mixing stress, and clean bread flavour. Instant dry, active dry, and fresh cake yeast for baking are almost always baker’s strains, not ale or wine isolates. A good baker’s strain doubles lean dough predictably and tastes mild. A poor or wrong-strain culture may rise slowly, taste overly beery, or stall in sweet doughs—choose osmotolerant types for rich formulas instead. This is the variety intent behind supermarket “baker’s yeast” labelling.
