Mixed Rhizopus Starter
A tier
A mixed Rhizopus starter blends oligosporus, oryzae, and sometimes other house moulds so the cake has both a reliable white knit and a broader fermented aroma. Traditional usar-derived cultures were mixed by default; modern packets recreate that on purpose. The result can be more complex than a single-strain oligosporus sachet and a little less predictable in a home incubator. You still need the same dry, warm, oxygenated beans. A mixed starter will not save wet, sour soy. Use it when you want a village-style cake rather than a laboratory-white block. Read the sachet: some "mixed" starters are mostly oligosporus with a token partner.
