Hua diao ("carved flower") is the aged Shaoxing drinking style, named for the decorated jars it once matured in. It is amber, nutty, slightly bitter, and savoury-sweet—the bottle you put on a banquet table and the one you should cook with when the sauce must taste of wine. Age statements matter; a young hua diao is paler and simpler. Use it in red-cooking, drunken chicken, and any marinade that should not taste of salt first. A dry amontillado is the emergency cousin. Keep salted cooking wine for the greasy-spoon wok, not for this leaf.
