Greater sandeel (Hyperoplus lanceolatus and related larger sand lances) runs bigger than lesser sandeel and can be filleted or fried whole when still small. Flesh remains oily and fragile; bones are more noticeable than in true whitebait sizes. Use for pan-frying or as bait. Less famous than lesser sandeel in conservation headlines but part of the same sand-lance complex on European coasts.
