Rouge Vif d'Étampes is the French “vivid red” flattened pumpkin from Étampes—deeply lobed, brilliant red-orange, and historically linked to Cinderella imagery. Flesh is thick, orange, and suitable for soups and pâtés de potiron; less stringy than poor carving types when well grown. The heirloom remains a show fruit and serious kitchen squash. Bake in wedges, puree, or use as a natural soup bowl after roasting. Hard rind needs force to open. Flavour is sweet-earthy classic maxima.
