Granular potassium bicarbonate is a free-flowing crystal cut for dissolving in tanks and wine, not for disappearing in a shortbread. It measures and stores cleanly and dusts less than the fine powder. In a dough it can leave alkaline specks unless you dissolve it first. Use it when the process is a liquid. Wine-grade granular exists as its own variety when the spec is oenological; this granular is the general food crystal. Do not cream it with butter and hope.
