Fine potassium bicarbonate powder is the sodium-free baking-soda stand-in: an alkaline dust that lifts cookies and muffins when an acid is present, and that seasons a reduced-sodium bakery spec. It is slightly different in taste and in how much acid it wants compared with sodium bicarbonate, so a straight gram-for-gram swap can leave a soapy or metallic echo. Sift it. A coarse grit will speck a pale crumb. It also buffers some beverages and cocoa. Keep it dry; it cakes and loses punch. This is the kitchen and bakery grind, not the wine-cellar granular.
