Low Methoxyl

Low methoxyl pectin has had a larger share of its methyl esters stripped away, so it no longer needs a jam-kettle's sugar load to gel. Calcium ions—from hard water, milk minerals, or a measured calcium salt—bridge the chains into a gel that can be soft and spoonable or quite firm depending on dose and buffer. This is the grade behind reduced-sugar fruit spreads, yoghurt fruit preparations, and bakery fillings that would weep or refuse to set on high-methoxyl pectin. Hydration still wants heat and careful dispersion; the set is more forgiving of lower Brix but unforgiving of the wrong calcium level. Too little calcium and the pan stays syrup; too much and the gel turns brittle or grainy. Flavour is as mild as other food pectins. Choose amidated LM when you need a wider calcium window or a more thermo-reversible texture for pastry work.
