High methoxyl pectin is the preserve-maker's original industrial grade: more than half of its galacturonic acid units still carry methyl esters, so it will only set when a cook reaches high soluble solids (typically around 55–65% sugar) and finishes distinctly acid. The gel is firm and clean-sliced rather than rubbery. Rapid-set HM holds whole strawberries and citrus shreds in suspension before they float; slow-set HM buys time for a clear jelly to be poured without trapping bubbles. Blend the pale powder through the sugar before it meets wet fruit or it fishes into lumps that never dissolve. It is the wrong tool for reduced-sugar spreads—those need low-methoxyl or amidated types that gel with calcium instead of a sugar-acid partnership. Keep the tin bone-dry; a damp HM powder cakes and loses set strength long before the use-by date.
