Traditional lemon cordial is juice, zest, sugar, and acid: cloudy or bright, sharp, the homemade squash that is not lemonade already diluted. Eureka or Lisbon lemons give a straightforward pithy tartness. Dilute to taste. It curdles dairy if you dump it. Meyer is a different, softer leaf.
