Meyer lemon cordial is floral, thinner-skinned, less pith-bitter, almost herbal-orange. It makes a softer squash and a prettier gin mix. It will not give the snap of a Eureka cordial in a posset. Use it when the perfume matters. It browns faster; keep it cold.
