Acacia Honey

Acacia (black locust, Robinia) honey stays liquid longer than most: high fructose, water-white to pale straw, and delicately floral with a clean vanilla finish. Hungarian, Italian, and Romanian acacia set the type. It will not crystallise in the cupboard for a year if it is honest. Use it in tea and in dressings where clover would cloud and darker honey would stain. It is too shy for gingerbread. A jar that sets hard in weeks was cut with another nectar.
