Organic guar follows certified cultivation of Cyamopsis tetragonoloba—mainly in the dry belts of Rajasthan, Gujarat, and Sindh—then milling without prohibited processing aids. The gum itself is still a cream galactomannan powder; what changes is the farm file, the solvent story, and the audit trail. Organic ice creams, baby foods, and gluten-free bakeries specify it when the rest of the formula already carries an organic claim. Viscosity still has to be bought separately: organic high-viscosity and organic medium lots both exist, and a weak organic powder will not thicken just because the seal is green. Expect a slightly higher price and, from smaller mills, more lot-to-lot swing. Flavour should remain clean; earthy notes mean husk, not organic status.
