Fast-hydration guar is milled or agglomerated so the galactomannan wets and builds viscosity in seconds rather than minutes. Instant dessert mixes, cold-filled dressings, and gluten-free batters mixed and baked the same hour depend on that speed. Particle engineering—not a different plant—does the work: finer mesh, porous agglomerates, or a surface treatment that stops the infamous dry core inside a wet lump. The same speed that helps a dry mix can punish a careless cook; rain the powder into vortexing liquid or premix it with sugar. Once hydrated it behaves like other food guars: cold-soluble, synergistic with xanthan, pasty if you are heavy-handed. Do not confuse "fast" with "high viscosity"—ask for both numbers on a spec sheet.
