Hot ginger cordial is built for heat: young or extra ginger, maybe chilli, a syrup that bites the throat when diluted. Victorian "ginger cordial" and modern fire-cider-adjacent drinks live here. Sugar frames the burn; it should not be only sugar. A spoon in hot water is a cold-night drink. In a dark-and-stormy-style mix it replaces weak ginger beer. Mild ginger cordial is the other leaf.
