Coconut blossom syrup is boiled coconut-palm flower sap, left liquid: butterscotch, mild mineral, the same sap that becomes coconut sugar when taken further to crystal. Indonesian and Philippine bottles lead. It pours on pancakes and sweetens a satay-adjacent sauce. It is not coconut milk and not palm-sugar syrup from arenga. Colour runs gold to amber.
