Pure cane syrup is evaporated sugarcane juice, nothing but cane: gold to amber, buttery, the Louisiana and Caribbean table syrup that is not molasses and not golden invert. Steen's-style tins are the American reference. Pour it on cornbread and biscuits. It is cleaner than blackstrap and rounder than white sugar syrup. If the ingredients list corn syrup, leave it on the shelf.
