Light cane syrup is a shorter boil or a filtered juice syrup: pale gold, milder, more sucrose-clean, used when you want cane without the dark kettle note. Some are just simple syrup from evaporated cane sugar. Fine in a light cocktail or a pale cake soak. For cornbread character buy pure open-kettle cane. Colour is not a quality grade here—it is a cook time.
