Demerara syrup is a bar and kitchen syrup made from demerara sugar (or labelled that way): large-crystal cane character, light molasses, gold brown. Bartenders use a 1:1 or 2:1 for rum drinks. It is not evaporated field juice unless the maker says so. It tastes of toffee and rum's best friend. In baking it is a flavoured simple syrup. Distinct from a Demerara-labelled bottle of pure cane juice syrup—read the process.
