Flavour is clean California almond—friendly in cookies, milk, and everyday roasting. Expect standard kitchen behaviour: blanch if you need pale paste, roast for aroma, grind for butter. Price will not replace Marcona on a tasting menu, and it does not try to. Check pack dates on any named minor variety, because smaller streams can move slower. Toast a sample before large batches.
