Baker's yeast extract is grown as Saccharomyces cerevisiae for the extract plant, not borrowed from a brewery. The flavour is cleaner, more bready and brothy, without hop bitterness. This is the default for a modern stock pot, a clean-label crisp, and a vegetarian gravy that should not taste of ale. It still needs roasting or further processing if you want dark consommé notes—that is the roasted-extract variety. A pale baker's extract is the quiet umami. Specify it when "yeast extract" on a premium label must not surprise.
