Easy-dispersing xanthan is agglomerated or surface-treated so the grains sink and wet instead of floating as dry-centred fish-eyes. It was built for plants that dump gum into a tank without a dedicated high-shear head, and it is a blessing in a home jug blender. Viscosity after full hydration matches the declared band—standard or high— once the last granule has disappeared. You still need agitation; "easy" is not "stir with a teaspoon and walk away." The particles are often coarser or more porous than milling-grade dust, which slows the first lump but can leave a faint grain if you under-mix. Specify this cut for dry sauce mixes, food-service kettles, and any formula that has burned a batch on ordinary xanthan dust.
