Clear Grade

Clear-grade xanthan is extra-washed after fermentation so residual broth solids do not haze a vinaigrette, citrus gel, or fruit drink. Ordinary food xanthan is cream and slightly cloudy in solution; this cut aims for a water-white or glass-bright sol that will not muddy a raspberry jelly or a sparkling beverage. The gum still shear-thins and stabilises oil droplets—clarity is a purity claim, not a different rheology. It costs more and is wasted in a brown gravy or a chocolate drink. Hydrate as you would any xanthan, then judge success by looking through the jar, not just by how thick the spoon feels. Some clear grades are also easy-dispersing; read both lines on the spec.
