Auricularia nigricans is a dark tropical/subtropical wood ear used as cloud ear type in some trade—blackish, rubbery, dried staple of Chinese cooking. Mild flavour, prized crunch-jelly texture. Soak dried; stir-fries and hot-and-sour soups. Species among several sold as black fungus. Rinse grit after soak.
