Whole-seed tahini keeps the hull but is not necessarily dark-roasted: speckled, more fibre, a middle bitterness. Some Lebanese artisan jars are this grind. It makes a rusticer hummus. Light hulled is silkier. Taste for rancidity; hulls go off.
