Stevia powder in the grocery sense is a white or off-white tabletop dust— usually a high-intensity steviol glycoside on a maltodextrin or erythritol carrier—sold to stir into coffee. A tiny volume is very sweet. Green leaf powder is a different, more bitter, herbal product; this variety is the refined white jar most people mean. It does not bulk a cake. Bitterness and liquorice hang around if the glycoside mix is crude or if you overdose. Conversion charts on the lid are not optional. Keep it dry; the carrier cakes.
