Stevia Drops

Stevia drops are a concentrated aqueous or glycerite solution of steviol glycosides for sweetening a glass, a bowl of yoghurt, or a sauce at the end. They add no bulk and almost no calories. Flavour houses hide some bitterness in the liquid; cheap drops still taste of liquorice and metal if you are heavy on the pipette. They will not cream a cake or feed yeast. Heat stability is decent, but you still have no structure. Count drops; do not "season like vanilla." Alcohol- based drops flash off in a hot pan and can taste harsh.
