Beech Smoke

Beech smoke flavour is the European default: clean, relatively mild, the wood behind many German and Alpine smoked sausages and cheeses. Condensates from beech are what a lot of EU smoke flavourings start from when the label does not shout a New-World wood. The taste is classic "smoked" without hickory bacon or mesquite desert. It suits frankfurters, smoked salt work, and pale cheeses. A tarry beech condensate is a bad purification, not a regional feature. Use hickory if you want American barbecue; use beech if you want a European smokehouse.
