Applewood smoke flavour is milder, slightly sweet-fruity, and the usual choice for pork, chicken, and cheeses that would find hickory too bacon-loud. Good applewood condensate smells of orchard fire, not of disinfectant. It is the liquid behind many "applewood smoked" cheddar slices and deli hams. Dose still starts in drops. It will not put a cold-smoke pellicle on a salmon by itself. Pair it with sage and pork fat rather than with mesquite's chilli-powder friends.
