Great burnet is Sanguisorba officinalis—taller, darker, more medicinal-historic than salad burnet, with leaves less commonly used as everyday cucumber salad herbs. Ornamental bottlebrush flowers attract garden interest. Young leaves can be eaten but are not the classic salad burnet experience. Do not assume great burnet equals salad burnet in recipes. Prefer S. minor for cucumber-cool salads.
