Purpurascens is purple-leaved common sage—young growth flushed violet-purple, mellowing toward green-grey. Flavour is true culinary sage, slightly softer when leaves are very young and colourful. Use for colour on the plate and in the garden; cook as ordinary sage once you confirm the resinous bite. Beautiful fried whole for contrast on pasta.
