Citrus Ponzu

Citrus ponzu uses lemon, lime, sudachi, or a blend when yuzu is dear: still soy-citrus, useful, less floral. A weeknight ponzu. Fine on gyoza. Yuzu is the perfume leaf. Do not use only bottled lemon juice and soy and call it ponzu if you can help it—dashi and mirin help.

Export citrus ponzu often meant lemon-soy.
Yuzu and mixed-citrus ponzus were labelled separately on better bottles.
