Ume Style Plum Syrup

Ume-style plum syrup is from Japanese ume (Prunus mume): more apricot-tart, perfumed, the sweet side of umeshu logic without (or with little) alcohol. It is not a European plum reduction. A soda, a yogurt, a drizzle on kakigori. Dark damson syrup is the other leaf.
