Triumph is an astringent Israeli commercial persimmon often sold firm after deastringency treatment—square-rounded fruit, deep orange, and the backbone of much Sharon Fruit production. Untreated, it must ripen soft like other astringent kaki; treated, it behaves as a firm sweet fruit for retail. Flesh is fine-grained and sweet when properly handled. Buy treated retail fruit for firm eating, or ripen untreated soft for traditional pulp. Important in Mediterranean export orchards. Storage and treatment quality determine whether firm fruit tastes clean or dull.
