Spanish Sweet Paprika

Spanish sweet paprika (pimentón dulce, unsmoked or lightly processed) is mild, rounded, and built for colour in stews, potatoes, and sausages. It is softer and often deeper red than some grocery “generic paprika,” with less raw green bitterness. Bloom gently in olive oil for patatas bravas sauces and galician octopus. Not the same as smoked pimentón—buy ahumado when you want campfire notes.
