Gula Jawa (gula merah) is the dark, smoky Javanese palm sugar, often from arenga or coconut palms, sold in hard cones and blocks. It is deeper and more burnt- caramel than a soft Thai tub, and it is the soul of gudeg, soto, and many Indonesian sweets. A little goes a long way in a savoury sauce. Colour is almost chocolate. If it tastes only of cheap molasses, you may have a cane lookalike. Shave it with a knife; the cone is dense. Pair it with tamarind, chilli, and coconut milk. It is not a cup-for-cup white sugar in a sponge.
