Light palm sap syrup is a shorter, paler boil from whatever palm the maker taps: gold, milder, more floral-sappy, less smoke. It is for drinks and pale cakes. Species still matters—light arenga is not light coconut. If it is water-white and tastes only of sugar, it may be invert with a palm story.
