Vegetarian oyster-style sauce is mushroom (often shiitake) and soy, thick, built to gloss a wok without shellfish. It tastes of mushroom umami, not of the sea. Use it for vegetarians. It will not fool a Cantonese grandmother on pure oyster greens, but it will sauce tofu.
