Classic orgeat is almond milk cooked with sugar and orange-flower or rose: cloudy, nutty, floral, the mai tai's spine. It should taste of almonds, not of only extract and gum. Homemade splits; shake it. A half-ounce is a lot. Orgeat is not almond extract and not amaretto.
