Origanum syriacum (za’atar plant, Syrian oregano) is a Levantine oregano relative central to za’atar herb blends—pungent, thyme-oregano aromatic leaves dried with sumac and sesame in regional mixes. Use dried in manakish toppings and labneh. Fresh is less common abroad. Not identical to Greek pizza oregano but related in the kitchen.
