Fantasia is a large yellow freestone nectarine with bright red-over-gold skin and firm, aromatic flesh that made it a California packing staple for decades. Flavour lands classic nectarine—sweet with lively acid—rather than the low-acid candy profile of some modern white types. Fruit holds shape for shipping better than soft melting garden nectarines when picked at the right firmness. Still appears in older orchards, U-pick blocks, and midsummer supermarket programmes. Excellent grilled cut-side down, baked into galettes, or sliced over yogurt when fully fragrant. Avoid board-hard fruit; Fantasia needs shoulder give and perfume to show its best.
